We’re seeking a talented Pastry Sous Chef to create a brand new brigade reporting into our Executive Chef. Under his guidance, and the guidance of Nicolas Rouzaud your flair, creativity, and attention to detail will be nurtured by the best in the industry. What You’ll Be Doing:
- Leading the pastry section with confidence and consistency
- Training and inspiring junior pastry chefs and commis
- Upholding food safety, allergen, and hygiene standards
- Collaborating with the Exec Chef on innovation and presentation
What We’re Looking For:
- Proven experience in a pastry leadership role (Sous or Senior CDP)
- Strong technical skills across patisserie, plated desserts, and bakery
- Calm under pressure, with excellent organisational instincts
- Passion for quality, creativity, and continuous improvement
- A team player who leads by example and communicates clearly
